Cous cous garden veggie salad

One cup uncooked cous cous

Two cons of corn 🌽 decob

Two jalapeños

Half red pepper

Half yellow pepper

Half red onion

5 cloves garlic

2 spring fresh thyme

1/4 cup olive oil

Prepare cous cous and place in bowl while hot drizzle olive oil and add salt and pepper to taste set aside.

Heat pan and add olive oil then garlic and thyme, and red onion, next corn, red peppers then yellow peppers and last jalapeños sauté until veggies are tender. While still hot pour over cous cous plate and enjoy! 😉

Cucumber with avocado salad

You will need

1 large English cucumber

2 avocados 🥑 ,

6-10 cherry tomatoes 🍅

2 radishes

salt pepper

1 tblsp lemon juice

Slice cucumbers at a slight diagonal direction

Slice radishes into thin slices and then quarter

Take avocado and dice

Slice cherry tomatoes in half

Mix all together and add lemon juice and salt and pepper taste to desired liking.

Enjoy!

Lemon garlic shrimp 

These shrimp are so juicy and are great alone as an appatizer or throw into a salad to make a healthy meal. 

One bag jumbo uncooked shrimp ( thawed) 

2 large garlic cloves minced 

2 lemons  

4 tbsp unsalted butter 

Add butter, garlic and shrimp to medium heat and cook until shrimp is pink. Squeeze both lemons over shrimp and drop lemons into pan cook a few mins longer until lemons are charged. Add shrimp to plate and drizzle butter and lemon from pan over top of shrimp add parsley and serve.

Quick salad with fresh crispy green beans 

When that pregnancy hunger hits you like a truck! 

You stop and fill up!

 Early lunch with a plate full of greens😍 I love food and flavor and I refuse to deprive myself of it! So I pack my plate full of healthy fats and green veggies that fuel my body to get me through the day while growing this little bug in me!!😉 

Handful of kale

Sliced cucumber 🥒 

Sliced radishes 

cherry tomatoes

1/2 avocado mashed mix with salt and pepper to taste 

I had left over pork chops so diced up and topped

Zucchini bites 

These little biscuit like zuccini bites are packed full of flavor and nutrition. Use as little buns for sliders or just eat plain as a snack.

2 cups shredded zucchini ( you must place shredded zucchini in a dish towel and ring out as much moister as you can, or they will be a pile of mush)

1/2cup grated Parmesan

1/2 cup grated Colby cheese

2 eggs

1tbsp basil

1 tbsp oregano

1 tbsp garlic salt

Mix together

Add 1/4 cup of almond flour  and mix. (You don’t have to use almond flour can use any flour)

(You may have to add a little more almond flour as mixture sits to soak up extra liquids)
Place 1 inch balls on a baking sheet lined with parchment paper.

Place in preheated over @ 400 degrees for 8-10 minutes until tops are golden brown.

Remove cool and enjoy!!😉👌
