Veggie & cheese loaded Quiche with bacon

You’ll need:

7 eggs

1/4 cup of milk

6-8 button mushrooms sliced

1 yellow onion diced

3 cups fresh spinach

1 1/2 cup cubed cheese (I used sharp cheddar & white cheddar)

Salt/ pepper

In bowl crack eggs and add milk beat until eggs are frothy. In sauté pan drizzle with olive oil and add mushrooms and onions and sauté. Once veggies start to soften add spinach and cover until spinach is wilted. Add salt and paper a few pinch’s. In pie pan butter bottom of pan and evenly Spears out veggies into pan, add cheese evenly and then pour egg mixture over top. Place into oven at 350 and bake for 30 minutes until eggs are cooked through and start to brown on top. Sprinkle bacon bites over the top and place back into oven for 5 minutes. Remove and let cook 5 minutes cut and serve! Enjoy 😊

Pumpkin oatmeal pancakes

You’ll need:

2 cups flour

2 tbsp baking powder

1 tsp baking soda

4 tsp pumpkin pie spice

1 tsp cinnamon

1 3/4 cups pumpkin purée

6 tbsp brown sugar

1 egg

1 3/4 cup milk

2 tbsp vegetable oil

1/2 tsp salt

1 1/2 cups quick oats

First mix flour, baking powder, baking soda and spices together. In Sierra the bowl mix wet ingredients. Then mix together gradually. Lastly add oats and bake on griddle at 350 degrees. Serve with whipped cream syrup and almonds. Enjoy!

Hint: you can make this in one big batch and then keep in your fridge for the week just take out and warm in toaster! Use for breakfast or snacks the kids love them!!

Egg bake with bacon and veggies

You’ll need:

9 by 13 inch pan

10 eggs

1/2 cup milk

2 stalks green onion chopped

1/2 package chopped mushrooms

1/2 green pepper chopped

1 1/2 cup cheddar cheese grated

1 package bacon chopped

Fresh chives chopped

2-3 tbsp butter

Salt/pepper

Chop all veggies and sauté in butter until onions are translucent and mushrooms browned about 4 minutes. (Don’t sauté chives chop and set aside). In pan pour veggie mixture. In a separate bowl crack eggs and pour milk and mix until fluffy. Add salt and pepper and pour over veggie mix in pan. Layer with cheese. Cook chopped bacon for about 4 minutes so they are not all the way cooked and cover cheese with bacon. Put into preheated oven at 375 degrees for 30-40 minutes until eggs are cooked through and top is golden brown. Sprinkle chives on top and cut and serve. I usually add hot sauce or salsa for an extra kick! Enjoy 😊

Poached eggs and avocado toast

You’ll need:

Eggs

Cucumber

Cherry tomatoes

Fresh basil

Avocados

Salt/pepper

Lemon juice

Sour dough bread

This is such and easy but amazing way to start your day or have as a healthy snack or lunch!

So first take a non stick pan and heat about 1/4 inch of water on bottom of pan. Crack eggs into pan, when cracking them in make sure you are close to pan and drop in slow so you keep the egg together and it doesn’t spread out to far. Cover and cook for 3-4 minutes until done to your likeness. Add salt and pepper to taste and place on plate. In bowl mash your avocado and add salt & pepper to taste squeeze a little lemon juice into avocados this will help keep the color of the avocados and give it a little extra yummy zing. Toast bread and spread avocado on top add sliced cucumber, tomatoes and fresh basil! Enjoy!! 😍

Everything bagel & Avocado mash

You need:

everything bagel

Red onion

English cucumber

Cherry tomatoes

Avocado

Salt/pepper

First put on a pot of water to boil, once boiling add egg and boil for 4-5 mins remove and run cold water over top until cool. Set aside. Take one avocado and remove skin and put. Put into bowl and mash, add salt/ pepper to taste you can add a splash of lemon if you would like for freshness. Then chop cherry tomatoes in half, slice red onion and cucumbers. Spread avocado on top of toasted bagel, add onion, you can top with cucumber and tomatoes also! So yummy and crunchy last peak egg and set on top of bagel and veggies! Salt and pepper and enjoy this delicious protein packed breakfast!!!

Zucchini Bread

4 cups fresh grated zucchini

3 cups four

1tsp baking powder

1 tsp baking soda

2 cups sugar

2 tblsp cinnamon

2 tsp almond extract

1/2 cup vegetable oil

3/4 stick butter (softened)

2 eggs

Mix flour, baking soda and baking powers together in bowl.

Then add the rest of ingredients, hold the zucchini and add handfuls until mixed together and creamy.

Grease, and flour two bread pans. Pour in mixture and bake @375 until cooked through, check at 40 mins with a toothpick of comes. Out clean and top I golden brown take out.

Let cool before removing from pan. Cool and enjoy! 😁

Low carb sugar free cheesecake cups

I’m telling you it was so hard to put these into their little cups and put the lid on them. They are so delicious I could have ate all the cheese cake filling before I got it into the mason jars. But I have the yummiest low carb snacks that I can enjoy ( in moderation I guess😝)

You don’t want to miss out on these yummy treats!!

8oz cream cheese softened

16oz heavy whipping cream

1 tblsp vanilla extract

Splash of cherry 🍒 juice (2  oz maybe)

3/4 cup sweetener

First you will need to mix the cream cheese with mixer until blended. Pour in the heavy whipping cream and vanilla and mix until cream is stiff. Then add the cherry juice and sugar substitute and blend.

Once done place into mason jars top with fruit of your choice and place on lid and keep in refrigerator. When you have a craving for a sweet snack, Enjoy 😊!

Turkey ham and veggie quiche 

Woke up this morning and thought it’s been a while since I made a quiche. So I threw one together! 

First you’ll need to chop your veggies. 

I put peppers, mushrooms, red onion, and jalapeños in a frying pan with a drizzle of olive oil and let cook down (this brings out all the yummy flavor so don’t skip this step) 

I then added the kale and letvwilt just for a minute before I poured the veggies into the bottom of the pie crust. 

Whisk up 6 eggs and a dash of milk with salt and pepper and pour mixture over veggie. 

Then add a half cup of cheese I used motz but you can use any kind of cheese you like! 😉 

Then add fresh kale and tomatoes to top and put into oven @375 for about 20-25 minutes. ( crust should be golden brown and eggs done in middle) depending on oven may need to be a little longer. 

Take out cut and add fresh cilantro and avocado with a dash of hot sauce and enjoy!!!
