These cookies are a great way to have your dessert and fill that sweet tooth craving without sending your blood sugars sky rocketing. They sort of remind me of a Russian tea cake. Sweet but nutty! 😉
1/2 cup soften butter
1/4 c. Vegetable oil
3/4 cup stevia
2 tablespoons vanilla extract
1 tsp baking soda
3 c. Almond flour
1 1/4 c. Sugar free chocolate chips
1/4 c. Crushed walnuts (optional) the almond flour gives it a nutty flavor so you don’t really need the walnuts but they add an extra layer to these cookies if you have them!😉
Mix dry ingredients together and then add in liquids ( oil, eggs and butter) mix well and add in chips and nuts.
Place one inch balls on a cookie sheet lined with parchment paper.
Bake @350 for 10 mins or until golden brown remove and cool on parchment paper. You can store in a plastic zip lock bag for up to a week (if they last that long😆)
